Raquel Díaz Ruiz is the head of research an action of Espigoladors. PhD in Sustainability, she has developed her research and professional career in generating knowledge about food losses and waste along the entire chain. He has been working for 10 years on different projects for diagnosing losses and waste, providing values of generation, causes and potential solutions. Right now, she coordinates the Espigoladors programmes and projects form gleaning, food recovery, research, and awareness.
